Ingredients

  • 70g pancake mix
  • 30g tempura flour
  • 320g frozen seafood mix
  • 1 Tbsp vinegar
  • 150g fresh chives
  • 1 egg
  • 120ml cold water
  • Generous amount of cooking oil

First, place the frozen seafood mix (320g) in a bowl. To enhance its freshness, pour plenty of water and add 1 tablespoon of vinegar. Let it thaw for about 10 minutes. This process helps remove any unpleasant odors and keeps the seafood plump and firm.

While the seafood is thawing, let’s prepare the batter for a crispier pancake. In a bowl, combine 70g of pancake mix and 30g of tempura flour, totaling 100g of dry ingredients. Using tempura flour contributes to a wonderfully crisp texture.

To the prepared dry ingredients, crack in 1 fresh egg and gradually pour in 120ml of cold water. Use a whisk or chopsticks to mix until the batter is smooth and free of lumps. Avoid overmixing, as this can make the pancake tough.

Now, it’s time to prepare the fresh chives (150g). Trim off about 2cm from the tough ends of the chives and then cut them into manageable pieces, about 5cm in length. Cutting them too small might cause them to break apart during cooking, so be mindful of the size.

Add the prepared chives and the thawed seafood to the smooth batter. Gently mix everything together with a spoon or spatula, ensuring that all ingredients are evenly distributed within the batter. Stir carefully to prevent clumping.

Heat a pan over medium heat and generously coat it with cooking oil. Once the pan is hot, spread the seafood and chive batter thinly. Cook until both sides are golden brown and beautifully crisp. Using plenty of oil will help achieve a crispier result.
