Crispy & Savory Stir-Fried Dried Shrimp Recipe
Easy Homemade Side Dish: Stir-Fried Dried Shrimp
This is a quick stir-fried dried shrimp dish I made in the evening. When freshly made, it’s wonderfully crispy, almost like a snack. Its savory and slightly sweet flavor also makes it a perfect pairing with beer, rather than just a side dish. Try this super simple recipe!
Ingredients- Dried shrimp 2 cups (approx. 50g)
- Cooking oil 2 Tbsp
- Minced garlic 0.5 tsp
- Chopped scallions 1 Tbsp
- Soy sauce 1 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp
- Cooking wine (Mirin) 1 Tbsp
- Sesame seeds, a pinch (optional)
Cooking Instructions
Step 1
We’re using 2 cups of dried shrimp. Using a measuring cup makes it easy to get the right amount. (This is approximately 50g.)
Step 2
Lightly toast the dried shrimp in a dry pan over low heat for about 1-2 minutes. This helps remove any fishy smell and enhances their nutty flavor. Afterward, place them in a sieve to remove any crumbs or dust.
Step 3
In a heated pan, add the cooking oil (2 Tbsp), minced garlic (0.5 tsp), and chopped scallions (1 Tbsp).
Step 4
Over medium-low heat, gently sauté the scallions and garlic until fragrant, being careful not to burn them. If the garlic starts turning brown, it means the heat is too high, so adjust accordingly.
Step 5
Once the scallion oil has a rich aroma, add the pre-toasted dried shrimp to the pan. Stir and cook over low heat, ensuring the shrimp are coated with the oil without burning.
Step 6
Add the sauce ingredients: soy sauce (1 Tbsp), oligosaccharide (1 Tbsp), and cooking wine (1 Tbsp) in equal proportions. Taste and adjust the soy sauce if you prefer a saltier flavor.
Step 7
Stir-fry briefly to allow the sauce to coat the shrimp evenly and adjust the seasoning. You’ll find yourself snacking on these as you make them – they’re incredibly addictive and hard to stop reaching for!
Step 8
Finally, sprinkle with sesame seeds. This is optional but adds a lovely nutty aroma. (Personally, I find the sesame seeds tend to separate, so you could omit them.) And just like that, your simple stir-fried dried shrimp side dish is complete! Even with taking photos, it took less than 20 minutes, and if you focus, you can probably make it in under 10 minutes.
