  • Dried shrimp (bori saeu) 70g
  • Cooking oil 2 Tbsp

Seasoning

  • Soy sauce 1 Tbsp
  • Cooking wine (mirin) 1 Tbsp
  • Corn syrup 1 Tbsp
  • Sugar 0.5 Tbsp
  • Minced garlic 0.5 Tbsp
  • Sesame oil 1 Tbsp
  • Sesame seeds, a pinch

Cooking Instructions

Step 1

First, heat an empty pan over medium-low heat without adding anything. Once the pan is warm, add the dried shrimp and stir-fry them until fragrant, being careful not to burn them. This step helps remove any impurities from the shrimp.

As you stir-fry the dried shrimp, you’ll notice white, powdery impurities appearing. Place the stir-fried shrimp in a fine-mesh sieve to separate them from these impurities. This ensures a cleaner final dish.

Wipe the pan used for stir-frying the shrimp clean with a paper towel. Add 2 tablespoons of cooking oil. Reduce the heat to low and add 0.5 tablespoon of minced garlic. Sauté the garlic until fragrant, being careful not to burn it.

Now it’s time to add all the seasoning ingredients. Add 1 tablespoon of soy sauce, 0.5 tablespoon of sugar, 1 tablespoon of cooking wine, and 1 tablespoon of corn syrup in order. Stir well to combine. The sauce will start to bubble and foam quickly as it heats up in the pan.

Keeping the heat at medium-low, quickly toss and stir to ensure the sauce evenly coats the dried shrimp. Avoid overcooking, as this can make the shrimp tough. Cook just until the sauce has slightly reduced and the shrimp are lightly golden, then turn off the heat.

Finally, drizzle in 1 tablespoon of sesame oil and a pinch of sesame seeds for extra nutty flavor. Give it a final quick toss using the residual heat of the pan to complete your delicious stir-fried dried shrimp. It’s best enjoyed warm, right after cooking!
