Eggplant and Tofu Patties for a Delicious Lunch Box Side Dish

This is the first time I’ve ever made eggplant side dishes that were completely devoured! Perhaps it’s because they’re pan-fried with savory tofu and eggs, but they are incredibly nutty and delicious. Even my husband, who usually dislikes eggplant, enjoyed them heartily. They’re perfect for a lunchbox or a light snack!

Main Ingredients
  • 1 eggplant
  • 1/4 block firm tofu (approx. 129g)
  • 2 eggs
  • A small amount of carrot (approx. 20g)
  • A small amount of green onion (white parts preferred, approx. 20g)

Seasoning & Others
  • 1 tsp sesame seeds
  • 1/2 tsp salt
  • Cooking oil for frying

Cooking Instructions

Step 1

First, prepare all the ingredients for the grilled eggplant and tofu patties. Fresh ingredients are key to a delicious dish!

Step 2

Wash the eggplant thoroughly and slice it into rounds about 0.5 cm thick. Pat the tofu dry with paper towels and mash it smoothly using a fork or a masher. Finely mince the carrot and the white parts of the green onion. Mincing the vegetables finely will help them combine well with the egg mixture and improve the texture.

Step 3

In a bowl, combine the mashed tofu, minced carrot, and minced green onion. Crack in the 2 eggs. Add 1 tsp of sesame seeds for a nutty flavor and 1/2 tsp of salt to season.

Step 4

Mix all the ingredients together thoroughly with a spoon or whisk until well combined and a smooth batter forms. Ensure the tofu, vegetables, and eggs are evenly incorporated. This even mixing is crucial for consistent flavor.

Step 5

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Drop spoonfuls of the tofu mixture into the pan, shaping them into small, round patties. Avoid making them too thin to ensure they hold their shape and cook up nicely thick.

Step 6

Place a slice of the prepared eggplant on top of each tofu patty. Gently press down with the back of a fork to help the eggplant adhere to the mixture. The eggplant will soften as it cooks and meld beautifully with the tofu base.

Step 7

After pressing the eggplant onto the tofu mixture, cook for about 2-3 minutes until the bottom is golden brown. Carefully flip the patties and cook for another 2-3 minutes on the other side, until both the eggplant and tofu are nicely browned and slightly crispy. Your delicious grilled eggplant and tofu patties are ready when they have an appealing golden-brown color on all sides!
