Whip this up in no time with ingredients from your fridge! Introducing the ‘Egg, Mushroom, and Tofu Rice Bowl’, featuring a delightful mix of crispy stir-fried vegetables, tender tofu, and rich, savory egg. The spicy Korean chili peppers cut through any richness, making it even more delicious.
Ingredients- 1 bag Enoki mushrooms (trim ends and separate strands)
- 150g Tofu (finely minced)
- 1/2 Onion (thinly sliced)
- 2 Korean chili peppers (seeds removed, finely chopped)
- 2 Eggs (fresh)
- 2 slices Processed cheese slices (cut into quarters)
- 2 bowls Cooked rice (warm)

Cooking Instructions
Step 1
First, trim the tough ends off the enoki mushrooms and separate them into individual strands following the natural direction of the mushroom. Finely mince the tofu using the side of a knife or a fork. Peel and thinly slice the onion, and finely chop the Korean chili peppers after removing their seeds.
Step 2
Prepare a deep frying pan or a wok and add a generous amount of cooking oil. Once the pan is heated, add the sliced onions and sprinkle a tiny pinch of salt. Sauté the onions until they become translucent. Then, get ready to add the next ingredients.
Step 3
Once the onions are lightly sautéed, spread the separated enoki mushrooms evenly on one side of the pan. On top of the mushrooms, spread the minced tofu thinly.

Sprinkle the finely chopped Korean chili peppers evenly over the tofu. You’ll start to smell their spicy aroma.
Step 5
Cover the tofu and chili peppers with the remaining enoki mushrooms. Then, add another layer of minced tofu and chopped chili peppers on top. Layering the ingredients like this will create a richer texture as they cook.
Step 6
Sprinkle salt evenly over the layered vegetable ingredients to season them. The salt helps to season the entire dish subtly.
Step 7
Cover the pan with a lid, or leave it uncovered if you prefer. Cook over medium-low heat until each ingredient is cooked through. During this process, the natural moisture from the ingredients will be released, allowing them to meld together.
Step 8
Once the ingredients are cooked to a certain extent, carefully use a spatula or turner to shake the pan, consolidating the ingredients into a single mass without them falling apart. Gently flip the mixture to toast the top side as well. (Be careful not to break the ingredients during this step!)
Step 9
In a separate small bowl, crack in the 2 eggs and add a pinch of salt. Whisk them together well to create the egg mixture.
Step 10
Shape the cooked mixture in the pan into a round ‘nest’ shape. Use your spatula to gently press the bottom and sides inwards, creating a hollow in the center where you will pour the egg mixture.
Step 11
Carefully pour the whisked egg mixture into the hollow of the nest. As the egg begins to set, arrange the quartered slices of cheese sporadically on top. The melting cheese will add a wonderful flavor. Turn off the heat at this point. (TIP: Adding a pinch of black pepper here is highly recommended to remove any unwanted odors and enhance the taste. I forgot to add it this time!)
Step 12
The melting cheese combined with the egg will help to season the entire dish. If you find it a bit bland, you can add a little soy sauce when serving to adjust the taste.
Step 13
Generously place the finished Egg, Mushroom, and Tofu Nest over warm cooked rice. Mix the rice and the nest together with your spoon to create a delicious meal where the crispy, savory, and spicy flavors harmonize perfectly in every bite!
