Perfect for a quick snack, these corn fritters are sure to be a hit with both kids and adults!
Ingredients
- 2 ears of cooked corn, kernels removed
- 4 Tbsp tempura flour (or all-purpose flour)
- 1 Tbsp potato starch
- Vegetable oil for deep-frying
- Cold water, as needed (for batter)
Cooking Instructions
Step 1
First, prepare the batter. In a bowl, measure and combine 3 tablespoons of tempura flour and 1 tablespoon of potato starch.
Step 2
Gradually add cold water while mixing the ingredients to form a batter. Aim for a consistency that is slightly thick, just enough to lightly coat the corn kernels. Ensure there are no lumps.
Step 3
Lightly coat the separated corn kernels with 1 tablespoon of tempura flour. This step helps the batter adhere better to the corn, resulting in a prettier shape when fried.
Step 4
Gently toss the corn kernels to ensure the flour is evenly distributed.
Step 5
Add the prepared batter to the bowl with the corn kernels and mix well until everything is combined.
Step 6
Using a spoon, scoop portions of the corn and batter mixture to form fritter shapes. You can use two spoons to help shape them into small, slightly flattened rounds. Gently press the back of the spoon to mold them.
Step 7
Heat a generous amount of vegetable oil in a pot over medium heat. The oil is ready when a small drop of batter sizzles and floats to the surface immediately.
Step 8
Carefully drop the formed corn fritters into the hot oil. Fry them until they are golden brown on both sides. Maintain medium heat to ensure they cook through without burning the outside.
Step 9
Once golden brown and crispy, remove the fritters from the oil and place them on a wire rack to drain excess oil.
Step 10
For extra crispiness, you can gently press the fritters with paper towels or allow them to drain on the rack a bit longer to remove any remaining oil.
Step 11
Serve the finished corn fritter snacks on a plate lined with paper towels or doilies for an appealing presentation. You can also sprinkle them with sugar or drizzle with syrup for an extra touch of sweetness!
