Crispy & Savory Almond Anchovy Stir-fry
How to Make Deliciously Crispy Anchovy Stir-fry with Almonds
A fantastic side dish that can last in the refrigerator for about a week! I’ve added chili peppers and sliced almonds for an extra kick and delightful crunch. Perfect for making ahead!
Main Ingredients- 100g dried anchovies (small)
- 50g sliced almonds
- 1 Korean chili pepper (optional)
Seasoning- 2 Tbsp olive oil
- 2 Tbsp oligosaccharide (or corn syrup)
- 0.5 Tbsp soy sauce
- A pinch of sesame seeds
- 2 Tbsp olive oil
- 2 Tbsp oligosaccharide (or corn syrup)
- 0.5 Tbsp soy sauce
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare the dried anchovies by sifting them through a sieve to remove any fine dust or broken bits. This ensures a clean and pleasant taste when cooked.
Step 2
Heat a dry pan over low heat. Toast the anchovies, stirring occasionally, until they are lightly golden and fragrant. Be careful not to burn them. Once toasted, let them cool slightly to enhance their crispiness.
Step 3
In a small bowl, whisk together the olive oil, oligosaccharide, and soy sauce to create the seasoning sauce. This helps ensure the sauce coats the ingredients evenly during cooking.
Step 4
Pour the prepared sauce into the pan and bring it to a gentle simmer over low heat. Once the sauce is bubbling, add the toasted anchovies, sliced almonds, and finely chopped Korean chili pepper (if using). Stir-fry quickly to coat everything evenly with the sauce. This step requires swiftness to maintain the anchovies’ crispiness.
Step 5
Transfer the finished stir-fry to a serving plate. Sprinkle with sesame seeds for a final touch. Let it cool slightly before serving for the best texture and flavor. Enjoy this delicious and healthy side dish!
