Don’t let leftover rice cakes and bacon go to waste! Create these irresistible bacon-wrapped rice cakes that are crispy on the outside, chewy on the inside, and bursting with savory flavor. Using an air fryer makes it incredibly easy and mess-free. Perfect as a delightful snack for kids or a tempting appetizer for adults!

  • 9 Tteokbokki rice cakes
  • 3 strips of bacon

First, soak the tteokbokki rice cakes in cold water for about 10-15 minutes until they soften. This prevents them from becoming too hard and helps them absorb flavors better.

Prepare 3 strips of bacon. The way you cut the bacon depends on the thickness of your rice cakes. If using thin rice cakes, cut each bacon strip into 3 pieces to make wrapping easier. If you have thick rice cakes, you can cut the bacon in half or use an entire strip to wrap around the rice cake. Adjust according to your preference!

Drain the soaked rice cakes and pat them thoroughly dry with paper towels. Any excess moisture can prevent the bacon from adhering properly and might result in a soggy texture after cooking.

Now, wrap each softened rice cake tightly with a piece of bacon. Ensure the bacon covers the rice cake completely to prevent it from unraveling. Once wrapped, thread 3 bacon-wrapped rice cakes onto a skewer for easier handling and to help them maintain their shape while cooking.

Line your air fryer basket with parchment paper to make cleanup a breeze. Arrange the bacon-wrapped rice cakes on the parchment paper, making sure they don’t overlap.

Preheat your air fryer to 180°C (350°F). Place the bacon-wrapped rice cakes inside and cook for the first 5 minutes. Be mindful that bacon can release its fat during cooking.

Return them to the air fryer and cook for an additional 5 minutes at 180°C (350°F). This will make the bacon wonderfully crispy and achieve that delightful chewy-crispy texture.

Cut each of the 3 bacon strips into 3 pieces. Since my rice cakes were thin, I cut the bacon thinly as well. If you’re using thicker rice cakes, you might want to cut the bacon into 2 pieces or use a whole strip per rice cake.
