Crispy & Savory Accordion Potatoes

Accordion potatoes are a dish prepared by slicing potatoes and fanning them out like a blooming flower for a beautiful presentation. These accordion-shaped potatoes are famously baked until crispy, offering a soft and delicious bite. Perfect for a satisfying snack or even as a side dish!

  • 4 Potatoes (medium-sized)
  • 5 Tbsp Butter (approx. 75g)
  • 1/2 Tbsp Salt (approx. 3g)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, let’s prepare the potatoes for our delicious accordion potatoes. Since we’re using the skins, wash the potatoes thoroughly under running water using a brush to remove any dirt.

This is the key step to creating the accordion shape! To prevent the potato from cutting all the way through, place two wooden chopsticks parallel to each other beneath the potato. Using the chopsticks as a guide, carefully make thin, even slices about 2mm apart, going almost to the end of the potato. After slicing, soak the potatoes in cold water for about 10 minutes to remove excess starch; this will help them become extra crispy.

While the starchy potatoes are soaking, let’s make the flavorful butter sauce! In a bowl, add 5 tablespoons of softened butter. (It’s best to use butter that has been softened at room temperature.)

To enhance the flavor of the butter, add 1/2 tablespoon of fine salt. You can adjust the amount of salt to your preference.

To help the butter and salt mix smoothly, I microwaved the mixture for about 10 seconds to slightly melt the butter before stirring. This made it much easier to combine. Stir well with a spoon until the salt is evenly incorporated into the butter.

Now it’s time to generously coat the sliced potatoes with the butter mixture. Simply placing the butter on top won’t get it into all the crevices. Gently spread open each slice of potato and carefully brush or spoon the butter mixture between each cut. This ensures a deeper flavor. This step can be a bit tedious, but it’s worth it for delicious results!

After coating the potatoes with butter, you can sprinkle them with dried parsley for extra color and flavor if you have it. Since I didn’t have parsley, I sprinkled black pepper instead. Place the prepared potatoes in your air fryer basket and cook at 180°C (350°F) for 30 minutes. (If using an oven, preheat to 180°C/350°F and bake for 30-40 minutes.)

If waiting 30 minutes feels too long, it’s okay to check on them after about 10 minutes! Check if the potatoes are cooking, and if any butter has melted and pooled at the bottom, spoon it back over the potatoes to make them even more moist and savory. Continue baking for the remaining time until the potatoes are golden brown.

Keep an eye on the potatoes, checking periodically to ensure they are cooked through and the outsides are golden and crispy. Once done, your delicious accordion potatoes are ready to serve! They are best enjoyed immediately while still warm.
