Ingredients
  • 4 sheets of rice paper
  • 4 boiled sweet potatoes (medium size)
  • Cooking oil (for frying)

Cooking Instructions

Step 1

First, prepare 4 medium-sized sweet potatoes. Place them in a pot, cover with water, and boil until tender. Be careful not to overcook them until they become mushy, as this will make them difficult to cut later. They should be fork-tender but still hold their shape. Boil for about 20-25 minutes.

Step 2

Once boiled, let the sweet potatoes cool down slightly. They should be cool enough to handle. Peel the sweet potatoes and cut them into long, thick sticks. Cutting them thicker than regular french fries will prevent them from breaking apart during frying and provide a better texture. Aim for a thickness slightly thinner than potato wedges but thicker than standard fries.

Step 3

While the sweet potatoes are cooling, prepare the rice paper. Take 4 sheets of rice paper and cut them into long strips. For square rice paper, cutting each sheet into about 5 strips works well, but I found that cutting them into 4 strips also creates a nice, crispy result by providing more surface area for crisping. Cut them to your desired size.

Step 4

Prepare a bowl of hot water. Take one sheet of the cut rice paper and dip just one end of it into the hot water until it becomes slightly pliable. Avoid soaking the entire sheet, as this can cause it to tear or become too sticky. Dipping just one end is the key!

Step 5

Place the slightly moistened rice paper flat with the damp side facing up. Starting from the stiffer edge, begin to roll it up tightly, leaving enough space at the end to enclose the sweet potato.

Step 6

Now, insert the pre-cut sweet potato stick into the center of the rolled rice paper. Don’t worry if the rice paper seems larger than the sweet potato; it will wrap around it nicely. Ensure the sweet potato is snugly tucked inside.

Step 7

Once all the sweet potatoes are wrapped in rice paper, heat a generous amount of cooking oil in a pan. Fry the rice paper-wrapped sweet potatoes, ensuring they have some space between them so the rice paper doesn’t stick together. Make sure the oil is hot before adding them for maximum crispiness.

Step 8

Since the sweet potatoes are already boiled, they don’t need long to fry. Fry them just until the rice paper wrapper turns a golden brown and crispy. This usually takes about 1-2 minutes. Once golden, remove them from the oil and place them on paper towels to drain any excess grease.

Step 9

Transfer the drained, warm fries to a bowl. Sprinkle with salt according to your preference and toss gently to coat evenly. A little saltiness enhances the flavor, especially when enjoyed with drinks. If you like pepper, you can add a pinch of black pepper at this stage for extra aroma.

Step 10

Finally, arrange the crispy rice paper sweet potato fries on a serving plate. They are delicious dipped in ketchup, sriracha sauce, or your favorite dipping sauce. Enjoy them with a cold beer or a refreshing soda for a truly satisfying homemade treat!
