  • 1 package pickled radish (danmuji, approx. 300g)

Prepare the pickled radish. First, slice the pickled radish into bite-sized pieces. Thin slices absorb seasoning better and offer a nice texture, but you can also slice them thicker according to your preference. I’ve sliced mine slightly thicker for a pleasant chew.

We’ll reduce the saltiness and sourness of the pickled radish to enhance its crispiness. Place the sliced pickled radish in a colander and rinse lightly under cold running water two or three times. Then, submerge the radish in lukewarm water for about 20 minutes. This step helps remove any strong odor and makes the radish extra crunchy.

After 20 minutes, drain the radish thoroughly using the colander. Gently press down with your hands to squeeze out as much excess water as possible. This ensures the seasoning adheres well and doesn’t make the salad watery. Transfer the squeezed radish to a wide bowl.

Now it’s time to mix in the delicious seasonings. Add 1 Tbsp minced garlic, 1 Tbsp red pepper flakes, 1 Tbsp plum extract, and 1 Tbsp toasted sesame seeds to the bowl with the radish. Mix gently but thoroughly, ensuring the seasoning is evenly distributed among the radish pieces. It’s important to mix well so the seasoning penetrates each piece.

Finally, drizzle in 1 Tbsp of sesame oil for a nutty fragrance and give it one last gentle toss. Your delicious pickled radish salad is ready! You can enjoy it immediately, or for an even better taste, chill it in the refrigerator for a while. It’s perfect as a side dish or as an ingredient for bibimbap!
