Ingredients
  • 300g bean sprouts
  • 3-4 Tbsp chopped scallions (green parts)
  • 1 Tbsp soup soy sauce (adjust with salt to taste)
  • 1 Tbsp sesame oil
  • Sesame seeds, for garnish

Cooking Instructions

Step 1

Rinse the bean sprouts thoroughly. To remove any husks, you can briefly soak them in water and then skim off any floating husks. Rinse again under cold running water 2-3 times. This helps maintain their freshness.

Step 2

After rinsing, don’t shake off too much water. Leave some moisture on the sprouts. When cooked in the microwave with this moisture, they will become tender and juicy, much like being steamed. This technique ensures they cook perfectly without adding extra water.

Step 3

Place the rinsed bean sprouts in a microwave-safe bowl with a lid. If you don’t have a lid, cover the bowl tightly with plastic wrap and poke 4-5 holes with a fork to allow steam to escape.

Step 4

Microwave for 3 to 4 minutes. Be careful not to overcook them, as they can become mushy. Check for doneness after 3 minutes; cooking time may vary slightly depending on your microwave’s wattage.

Step 5

Once cooked, it’s best to let the bean sprouts cool slightly by spreading them out on a wide plate or in a colander, rather than rinsing them immediately under cold water. This preserves their crisp texture and fresh aroma. Rinsing can dilute the bean sprouts’ natural flavor.

Now, let’s season the sprouts. I prefer using soup soy sauce for its deep, savory flavor. However, since it can darken the color, use about 1 tablespoon. Then, gradually add salt until the seasoning is just right for your palate. I personally like a milder flavor, so I used 1 tablespoon of soup soy sauce and adjusted with a pinch of salt.

Step 7

To the seasoned bean sprouts, add the chopped scallions, fragrant sesame oil, and a generous sprinkle of sesame seeds. Gently mix everything together until well combined. Your delicious and easy seasoned bean sprouts are ready!
