We’ve created a fantastic dish using leftover grilled pork neck from the weekend: pork neck fritters! The texture and taste exceeded our expectations, making it an excellent accompaniment to drinks. For dipping, we made a special sweet and spicy chicken sauce that pairs wonderfully with the fritters! This recipe is perfect for using up leftovers and creating a surprisingly delightful meal.

  • 2 cups All-purpose flour

  • 2 cups Panko breadcrumbs
  • 2 Tbsp Curry powder
  • 1/5 tsp Black pepper
  • 1/3 tsp Salt

Sweet & Spicy Chicken Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Ketchup
  • 4 Tbsp Corn syrup (or other liquid sweetener)
  • 2 Tbsp Korean plum extract (or fruit syrup)
  • 1 Tbsp Soy sauce
  • 3 Tbsp Sugar
  • 1 Tbsp Minced garlic

Cooking Instructions

Let’s start by making the special sweet and spicy chicken sauce! In a bowl, combine 1 Tbsp Gochujang, 3 Tbsp Ketchup, 4 Tbsp Corn syrup, 2 Tbsp Plum extract, 1 Tbsp Soy sauce, 3 Tbsp Sugar, and 1 Tbsp Minced garlic. Whisk everything together until well combined and smooth.

This sweet and spicy chicken sauce is so versatile and delicious; you’ll find yourself using it often! Because the sugar needs time to dissolve and the flavors to meld properly, we make it first to allow about 30 minutes for resting and mingling.

Now, let’s prepare the pork neck. We’re using 4 slices. For a better texture in the fritters, trim off any large, tough pieces of fat. Then, cut the pork neck into bite-sized pieces. Don’t discard the trimmed fat! Set it aside to use in stews or other dishes for added flavor. Lightly season the prepared pork pieces with a pinch of pepper and salt.

The magic combination for a perfect crispy coating is ‘flour, egg, and breadcrumbs’ – we call it ‘Mil-Gye-Ppang’ in Korean! After much experimentation, this trio yields the most satisfying crunch. It’s best to have ample amounts of each coating ingredient ready when you’re breading.

In separate wide dishes or trays, place 2 cups of all-purpose flour, 2 beaten eggs, and 2 cups of panko breadcrumbs. For an extra flavor boost, mix 2 Tbsp of curry powder into the flour. This adds a subtle aroma and helps reduce any gamey odors.

Now, let’s get to the breading! The key to a super crispy fritter is to work quickly. Once flour meets moisture, gluten starts to develop, which can make the coating chewy. To ensure maximum crispiness, bread the pork as fast as possible. Take the prepared pork neck pieces and dredge them thoroughly in the seasoned flour, ensuring an even, thin layer.

Next, dip the floured pork into the beaten egg mixture, making sure it’s fully coated. The egg wash helps the breadcrumbs adhere well.

Finally, coat the pork with panko breadcrumbs. Following the flour-egg-breadcrumb sequence, quickly press the pork into the breadcrumbs, ensuring an even and complete coating all around. Working swiftly is crucial for achieving that perfect crisp!

It’s time to fry! Heat your oil to 170°C (338°F). Since the thickness of pork neck can vary, we’ll fry until golden brown and cooked through, rather than relying on a strict time. Fry the breaded pork pieces until they float to the surface, which usually takes about 5 minutes, and then continue for another 2 minutes until a beautiful golden-brown color develops. Once fried, transfer the fritters to a wire rack or paper towels to drain excess oil.
