Delicious Homemade Crispy Pork Fritters (Similar to Tangsuyuk)
When you crave Tangsuyuk but want to make it at home, here’s a recipe for crispy and delicious pork fritters! They are crispy on the outside, juicy on the inside, and perfect with a sweet and spicy mayo dipping sauce. Enjoy them as a meal or a delightful snack.
Pork Fritter Ingredients- 600g Pork Shoulder (cut into bite-sized pieces)
- 3 Tbsp Cornstarch or Potato Starch
- 2 Tbsp Minced Garlic (use generously!)
- 1 Tbsp Minced Ginger (optional, omit if you dislike ginger flavor)
- 1/2 Tbsp Herb Salt (or regular salt with a pinch of herbs)
- 1/2 Tbsp Black Pepper
- Vegetable Oil (enough for deep frying)
Spicy Mayo Sauce Ingredients- 2 Tbsp Mayonnaise
- 1 Korean Green Chili (seeds removed and finely minced)
- 10cm White Part of Green Onion (finely minced)
- 1 tsp Sugar
- 2 Tbsp Mayonnaise

Cooking Instructions
Step 1
First, cut the pork shoulder into bite-sized pieces, about 2-3cm. In a bowl, combine the pork with 2 Tbsp minced garlic, 1 Tbsp minced ginger, 1/2 Tbsp herb salt, and 1/2 Tbsp black pepper. Gently mix with your hands, ensuring the seasonings coat the pork evenly. This marinade helps tenderize the meat and remove any porky odor. Let it marinate for about 10 minutes for the flavors to meld.
Step 2
Add 3 Tbsp of starch (cornstarch or potato starch) to the marinated pork. Mix again by hand, ensuring each piece of pork is thoroughly coated. This coating is key to achieving that delightful crispiness when fried. Make sure the starch adheres well to the meat.
Step 3
Heat a generous amount of vegetable oil in a deep pan or wok over medium heat. Once the oil reaches about 170-180°C (340-350°F), carefully add the coated pork pieces one by one, making sure they don’t clump together. Fry until the pork turns golden brown. Remove the pork from the oil and drain on a wire rack.

Reheat the oil to a slightly higher temperature, around 180°C (350°F). Re-fry the pork pieces for another 30 seconds to 1 minute. This double-frying technique ensures the fritters are extra crispy on the outside while remaining tender and juicy inside. Drain any excess oil thoroughly after the second fry.
Step 5
Now, let’s prepare the sauce. Finely mince the deseeded Korean green chili and the white part of the green onion. In a small bowl, combine 2 Tbsp mayonnaise, the minced chili and green onion, and 1 tsp sugar. Stir well until all ingredients are fully incorporated. If you prefer more spice, feel free to add extra chili. A dash of soy sauce or vinegar can also be added for extra flavor complexity.
