  • King oyster mushrooms 4

Score the fatty side of the whole pork belly in 1cm intervals. This scoring technique helps the fat render and crisp up beautifully, while also allowing seasonings to penetrate for deeper flavor.

Preheat your air fryer to 120°C (250°F). Place the seasoned pork belly inside and cook for 2.5 hours. Cooking at a low temperature for an extended period is key to rendering the fat slowly, ensuring the inside remains tender and juicy while preparing the exterior for crisping.

Carefully pour the rendered pork fat from the air fryer into a pan. Add about 1/2 tablespoon of cooking oil.
