- 2 Tbsp vinegar
- 3 Tbsp oligodang (corn syrup)
- 1 Tbsp mirin (cooking wine)
- 0.5 Tbsp Sriracha chili sauce
Cooking Instructions
Step 1
Let’s start by prepping the vegetables. Wash the carrot, onion, and bell pepper, then julienne them into uniform strips about 0.5 cm thick. Slice the green onion lengthwise to match the other vegetables. For the cilantro, trim the roots and wash thoroughly. Pat dry and cut into roughly 4 equal lengths. Prepping the vegetables this way ensures they cook evenly and look appealing in the final dish.
Step 2
Grab a wok or a deep frying pan and add 2 tablespoons of olive oil. Heat over medium-low heat. Add the minced garlic and sauté until fragrant, making sure not to burn it. This step is crucial for building a deep flavor base for your stir-fry.
Step 3
Once the garlic is fragrant, add the sliced green onions to the pan. Stir-fry them with the garlic until they become slightly softened and release their sweet aroma into the oil. Keep the heat at medium.
Step 4
Now, add the julienned carrot, onion, and bell pepper. Stir-fry them quickly for about 1 minute, just until they begin to soften but still retain a slight crispness. Overcooking the vegetables will make them soggy, so a quick stir-fry is key.
Step 5
It’s time for the star of the dish – the pork belly! Turn the heat up to high. Add the thinly sliced pork belly to the pan and immediately break it apart with chopsticks or tongs so it doesn’t clump together. Stir-fry quickly until the pork belly is lightly browned and cooked through, which should only take about 1-2 minutes due to its thinness.
Step 6
Once the pork belly is mostly cooked, add 1 tablespoon of oyster sauce. Pour it around the edges of the pan and stir-fry everything together. The rich umami of the oyster sauce will coat the pork and vegetables beautifully. Now, add 1 tablespoon of your prepared special fish sauce and continue to stir-fry.
Step 7
Keep the heat on high and continue to stir-fry vigorously. This will help the rendered pork fat, the sauces, and the ingredients meld together, intensifying all the flavors. Ensure all the ingredients are well-coated with the sauce for maximum taste.
Step 8
Time for the final seasoning! Taste the stir-fry and adjust with more of your homemade fish sauce if needed. For a touch of heat, you can add a pinch of crushed red pepper flakes or a dash of black pepper. Give it a final quick toss to distribute the seasonings evenly.
Step 9
And there you have it – a delicious Pork Belly Stir-fry! Transfer the stir-fry to a serving plate. Garnish generously with fresh cilantro. The bright, herbaceous notes of cilantro cut through the richness of the pork and add a refreshing finish. Serve hot with steamed rice for a satisfying meal, or enjoy it as a flavorful accompaniment to your favorite drinks!
