- A few spring onions (for garnish)
- 1/2 onion (for roasting)
- 1 bell pepper (for roasting)
- 1 handful whole garlic cloves (for roasting)
Garlic Sauce- 2-3 Tbsp minced garlic
- 2 Tbsp oligodang (corn syrup)
- 2 Tbsp olive oil
- 2 Tbsp sugar (optional, for extra sweetness)
- 1 Tbsp Worcestershire sauce or Tonkatsu sauce
- 2-3 Tbsp minced garlic
- 2 Tbsp oligodang (corn syrup)
- 2 Tbsp olive oil
- 2 Tbsp sugar (optional, for extra sweetness)
- 1 Tbsp Worcestershire sauce or Tonkatsu sauce
Cooking Instructions
Step 1
Prepare the 700g whole pork belly. Scrape the skin clean with a knife, then score the meat side in a crisscross pattern. This helps the sauce penetrate better and results in a more tender bite after cooking.
Step 2
Season the scored pork belly generously with a pinch of salt and black pepper. Sprinkle 1 Tbsp of curry powder evenly over the meat; this helps remove any gaminess and adds a lovely aroma. Gently massage the seasoning into the pork belly with your hands.
Step 3
Now, let’s coat the pork belly. Place the seasoned pork belly in a plastic bag or a wide bowl. Drizzle a little olive oil over it. Massage the pork belly thoroughly to ensure the olive oil coats the entire surface. This step is key to achieving a crispy skin in the air fryer.
Step 4
While the pork belly is cooking, let’s make the delicious garlic sauce! In a small bowl, combine 2-3 Tbsp minced garlic, 2 Tbsp oligodang, 2 Tbsp olive oil, 2 Tbsp sugar (if you prefer it sweeter), and 1 Tbsp Worcestershire sauce or Tonkatsu sauce. Whisk until the sugar is dissolved. It’s simple but packed with flavor!
Step 5
Place the prepared pork belly into the air fryer basket. Cook at 120°C (250°F) for 2 hours. Cooking at a low temperature for a longer time ensures the inside becomes incredibly tender. Flipping it halfway through can help ensure even cooking.
Step 6
While the pork is cooking, prepare your side vegetables. Cut the onion into large chunks. Remove the seeds from the bell pepper. Place the onion, bell pepper, and whole garlic cloves into the air fryer alongside the pork belly, or in a separate tray. Roasting the vegetables with the pork allows them to absorb the delicious pork drippings and aroma.
Step 7
After 2 hours, carefully remove the pork belly from the air fryer. The exterior might look slightly shrunken, but this is the secret to that perfect crispy-tender texture!
Step 8
The skin should be beautifully browned and crispy, while the inside remains incredibly tender and moist. You can check if it’s cooked through by piercing it with a skewer; no pink juices should come out.
Step 9
Slice the cooked pork belly into bite-sized pieces and arrange them attractively on a serving plate. Add the roasted vegetables like the onion, bell pepper, and garlic cloves for a visually appealing presentation.
Step 10
Finally, generously drizzle the prepared garlic sauce over the pork belly. Your crispy and tender Garlic Pork Belly Bossam is ready to be enjoyed! Serve immediately while warm for the best flavor experience.
