Crispy Pink Sausage Pancake (Sausage Jeon)
Chef Nam Bora’s Secret Recipe for Ultra-Crispy Pink Sausage Jeon
Remember those beloved pink sausage pancakes from school lunches? This recipe, inspired by Chef Nam Bora’s technique from ‘Cook Restaurant,’ elevates this classic comfort food. Instead of a typical egg batter, it uses a special flour mixture that results in an incredibly crispy exterior while keeping the inside tender and flavorful. Perfect as a side dish or a quick snack, it’s a taste of nostalgia that’s surprisingly easy to make. Let’s recreate this delightful treat!
Ingredients
- 1/2 Pink sausage
- 1 Tbsp pancake mix (buchim garu)
- 1 Tbsp cornstarch (or potato starch)
- 1 Tbsp mayonnaise
- Pinch of black pepper
- Pinch of salt
Cooking Instructions
Step 1
Slice the pink sausage into rounds about 1 cm thick. You can adjust the thickness to your preference.
Step 2
In a bowl, combine 1 Tbsp of pancake mix and 1 Tbsp of cornstarch. Gradually add water while whisking, until you achieve a thick batter that flows slowly when lifted with chopsticks. Be careful not to make it too watery, as this is key to achieving a crispy texture. Adding too much water initially can lead to a soggy coating.
Step 3
Add 1 Tbsp of mayonnaise to the batter and mix well. The mayonnaise not only adds a richer, savory flavor but also contributes significantly to the crispiness. Finally, season with a pinch of black pepper and a pinch of salt to complete the batter. Coating the sausage slices in this batter, rather than just egg, yields a remarkably crispy jeon.
Step 4
Heat a generous amount of cooking oil in a frying pan over medium heat. Carefully place the coated sausage slices into the hot oil, ensuring there’s some space between them to prevent sticking. Because of the starch in the batter, it’s best to fry them until golden brown and crispy. Flip them occasionally to ensure even cooking on both sides.
Step 5
Once golden brown and crispy, remove the pink sausage jeon from the pan and place them on paper towels to drain excess oil. You’ve now made incredibly simple yet delicious nostalgic pink sausage jeon! Enjoy this delightful treat.
