  • 150g pickled radish (about 1/2 cup)
  • 200g warm cooked rice (about 1 bowl)
  • 2 Tbsp cooking oil
  • Pinch of black pepper
  • Pinch of salt

Cooking Instructions

Prepare the pickled radish. First, thinly slice the pickled radish, then finely chop it. Instead of mincing it too finely, it’s best to chop it into uniform pieces of about 0.5cm so you get a nice chew when you eat it. Gently press the chopped pickled radish with paper towels to remove excess moisture; this helps prevent the fried rice from becoming soggy.

Have your rice ready and warm. Fluffy, well-cooked rice is key to a good fried rice texture. If using cold rice, warm it slightly in the microwave to prevent clumping.

Heat the cooking oil in a frying pan over medium heat. Add the chopped pickled radish and stir-fry. Sauté for about 1-2 minutes until you can smell its tangy aroma and the radish turns slightly golden. Be careful not to overcook, as it can become mushy.

Once the pickled radish is nicely sautéed, add the warm cooked rice to the pan. Use a spatula to break up any clumps of rice and mix everything thoroughly with the radish. Stir-fry until the radish and rice are well combined.

Finally, add a pinch of black pepper and a pinch of salt to season. Taste and adjust seasoning as needed, as the pickled radish itself is already seasoned. Since the radish has a natural saltiness, add only a small amount of salt at first. Once all ingredients are well mixed and heated through, turn off the heat and serve immediately. Enjoy!
