Main Ingredients

  • Pickled radish strips, 900g
  • Scallion strips, 300g

Cooking Instructions

Step 1

First, it’s crucial to reduce the saltiness of the pickled radish strips. Prepare 900g of pickled radish strips and soak them in cold water for about 20 minutes to remove excess salt. Afterward, rinse them thoroughly under cold running water and drain well.

Step 1

Step 2

Place the drained pickled radish strips into a large mixing bowl.

Step 2

Step 3

Prepare 300g of scallions. If the scallion strips are long, cut them into bite-sized pieces (about 2-3 segments) and add them to the bowl with the pickled radish.

Step 3

Step 4

Now it’s time to add the seasoning. Combine all the prepared seasoning ingredients in the bowl. (Tip: If you have homemade ‘Dallae Ganjang’ (wild chive soy sauce), you can use that instead of adding soy sauce, vinegar, sugar, and rice wine separately. Step 4

Step 5

Add 6 tablespoons of chili flakes for a spicy kick and vibrant red color, along with 1 tablespoon of minced garlic for added flavor. Don’t forget to include 4 tablespoons of vinegar for that essential tangy brightness in pickled radish dishes.

Step 5

Step 6

Gently mix and toss all the ingredients and seasonings together with your hands until well combined. Your crispy Jjanjipachae Muchim is ready! It’s delicious as a standalone side dish with rice, and even more delightful when served with warm rice, Yukjeon, or grilled meats. (Another great tip: When your ramen is almost cooked, add a spoonful of this Jjanjipachae Muchim to the pot and mix it in for an amazing flavor boost!)
