  • 6 slices of bread
  • 1 medium boiled potato
  • 2 boiled eggs
  • 1/2 small onion
  • 1 pickled cucumber (store-bought)
  • 1.5 Korean chili peppers (cheongyang)
  • 3 Tbsp butter

Dressing Ingredients

  • 5 Tbsp mayonnaise
  • Pinch of black pepper
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar

Cooking Instructions

Thinly slice the pickled cucumber. It’s important to soak the sliced pickled cucumber in cold water for about 20 minutes to retain its crispiness and remove excess saltiness. Afterward, use a cheesecloth or paper towels to squeeze out as much moisture as possible. This step ensures the sandwich filling isn’t watery and results in a neat sandwich.

Remove the stems from the Korean chili peppers, lightly shake out the seeds, and mince them finely. If you enjoy spicy food, you can leave the seeds in or add more. If you prefer less heat, use regular green peppers or reduce the amount of cheongyang peppers.

Peel the boiled eggs and chop them roughly, or mash them with a fork. For a moist texture, it’s best not to mash them too finely, leaving some small chunks.

Peel the boiled potato while it’s still warm and mash it smoothly using a fork or a potato masher. Mashing it thoroughly will make the sandwich filling exceptionally smooth.

Finely mince the onion to reduce its pungent flavor. Combine the mashed potato, chopped boiled eggs, minced pickled cucumber, minced chili peppers, and minced onion in a bowl.
