You’d never guess it’s a dumpling until the very first bite! Watch your ordinary frozen dumplings transform into crispy, savory croquettes. Be sure to blow on them gently as they’re hot! This is a delightful snack that everyone, young and old, will love. Adapted from ‘Every Recipe in the World’ by ‘Mangae Recipe’.

Main Ingredients

  • 8 frozen dumplings
  • 2 eggs
  • 1/2 cup tempura flour (using a paper cup)
  • 1 cup breadcrumbs (using a paper cup)

Tangy & Sweet Sauce

  • 6 Tbsp mayonnaise
  • 1 Tbsp chopped pickles
  • 2 Tbsp chopped onion
  • 1 Tbsp lemon juice
  • 2 Tbsp honey
  • Pinch of black pepper

Optional Ingredient

  • Pinch of dried parsley (for garnish)

Cooking Instructions

Step 1

First, let’s prepare the batter for coating the croquette mandu. In a wide bowl, combine the tempura flour and 2 eggs. Whisk them together until smooth, creating a thick batter. If the batter is too thin, it won’t adhere well to the dumplings, so adjust the consistency carefully.

Dip each frozen dumpling into the prepared tempura batter, ensuring it’s fully coated. Then, generously coat the battered dumplings with breadcrumbs, pressing gently to help them stick. This extra press will ensure a crispier finish when fried.

Now, it’s time to fry! Pour enough cooking oil into a pot or deep pan to generously cover the dumplings, and preheat the oil to about 170-180°C (340-355°F). If you don’t have a thermometer, test the oil by dropping a small piece of breadcrumb; it should sizzle and float immediately. Carefully place the breaded dumplings into the hot oil, frying them until golden brown on all sides, which should take about 4-5 minutes. Avoid frying over excessively high heat, as this can burn the outside before the inside is heated through; medium heat is ideal.

While the dumplings are frying, let’s make the dipping sauce. In a separate bowl, combine the mayonnaise, chopped pickles, chopped onion, lemon juice, honey, and a pinch of black pepper. Stir well until the honey is fully dissolved. You can adjust the amount of honey or lemon juice to your preference. Once fried, transfer the croquette mandu to a paper towel-lined plate to drain excess oil. Serve them with the freshly made sauce, and enjoy the delightful contrast of crispy exterior and tender, flavorful filling! For an extra touch, sprinkle with dried parsley. Remember, they’ll be hot, so enjoy them carefully!
