First, wash the zucchini thoroughly under running water. Trim off the ends and slice it into uniform, thin rounds, about 0.5 cm thick. Place the sliced zucchini in a bowl and sprinkle with 1/2 tsp of salt. Let it sit for 10 minutes to draw out excess moisture. This step is crucial for achieving a firm fritter that won’t become mushy.

While the zucchini is salting, crack the 2 eggs into a separate bowl and whisk them well. Beating the eggs thoroughly until smooth will help create a more tender fritter.
