Prepare the chicken breast by cutting it into bite-sized pieces, approximately 1.5 cm thick. Ensure the pieces are uniform in thickness for even cooking. Season the cut chicken breast generously with salt and pepper according to your preference. Let it marinate for about 10 minutes to allow the flavors to penetrate.

In a bowl, combine 1 cup of pancake mix (or all-purpose flour) with 3/4 cup of water. Whisk until you have a smooth batter, free of lumps. The batter should be thick enough to coat the chicken breast without being too runny. Add more water or flour as needed to achieve this consistency. Dip the marinated chicken breast pieces into the batter, ensuring each piece is well coated.
