Main Ingredients

  • 1 packet Enoki mushrooms (trimmed and quartered)
  • 2 large Eggs
  • 1 Tbsp Pancake mix (buchim garu)
  • 2 Scallions (finely chopped)
  • Salt to taste
  • Black pepper to taste
  • Cooking oil, generous amount

Cooking Instructions

Step 1

First, rinse the enoki mushrooms under running water and gently squeeze out excess moisture. Trim off the tough bottom part, then cut them into four equal portions for bite-sized pieces. Wash the scallions and finely chop them. If you don’t have scallions, you can substitute with finely chopped green onions or chili peppers. For a spicy kick, adding some Cheongyang peppers would be delicious.

In a large bowl, combine the prepared enoki mushrooms and chopped scallions. Crack in the two eggs, add 1 tablespoon of pancake mix, a pinch of salt, and a dash of black pepper. This will form the base for your pancakes.

Using a spoon or spatula, mix all the ingredients thoroughly until well combined. Ensure the chewy texture of the enoki mushrooms, the savory eggs, and the crispiness from the pancake mix are evenly distributed. Proper mixing is key for the best texture.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Using a spoon, scoop portions of the enoki mushroom batter and place them into the hot oil. Gently press down with the back of the spoon to flatten them into thin, round shapes. Cook until one side is golden brown and crispy, then flip and cook the other side until equally golden and crisp. Frying them until both sides are beautifully browned will complete your delicious enoki mushroom pancakes.
