Simple and Delicious Potato Stick Pancake Using Seasonal Potatoes
The warm summer has passed, and though I thought autumn was here, it feels more like early winter… Is it cold because it’s the week leading up to the college entrance exams? Is it sweet potato season? I have potatoes at home, so I’ll be posting a recipe for a simple potato stick pancake using seasonal ingredients. This dish is easy to make, yet incredibly satisfying, perfect for a light meal or a tasty snack. Let’s get started!
Main Ingredients- 2 Potatoes (medium-sized)
- 2 Tbsp Salt
- 3 Tbsp Olive Oil (or cooking oil)
Cooking Instructions
Step 1
First, thoroughly wash and peel the potatoes. Then, julienne them into thin, uniform strips. The thickness of the strips significantly impacts the texture of the pancake, so try to cut them evenly and thinly. If you’re not comfortable with a knife, feel free to use a mandoline slicer.
Step 2
Rinse the julienned potatoes briefly under cold running water to remove excess starch. This step helps prevent the potato sticks from clumping together and contributes to a crispier texture. (This step is optional, but recommended for better results.)
Step 3
After draining the rinsed potato sticks, add the 2 tablespoons of salt and mix well. Salting the potatoes draws out moisture, which helps in making the pancake crispier.
Step 4
Let the salted potato sticks sit for about 15 to 20 minutes. You’ll notice that the potatoes release moisture and appear limp, as shown in the photo. This indicates they are properly salted.
Step 5
Discard the water that has accumulated from the salted potatoes. Place the potato sticks in a colander and drain as much water as possible. Gently pressing them with your hands can also help remove excess liquid.
Step 6
Ensuring the potato sticks are well-drained is crucial to prevent oil splattering while cooking and to achieve a golden, crispy finish. Squeeze out any remaining moisture using a cheesecloth or paper towels.
Step 7
Heat 3 tablespoons of olive oil in a non-stick skillet over medium heat. Spread the drained potato sticks thinly and evenly across the pan. Make sure to separate the sticks so they don’t clump together.
Step 8
Once the edges of the potato pancake turn golden brown and appear crispy, carefully flip it using a spatula. Cook the other side until golden brown and crispy as well. Your delicious potato stick pancake is ready! Enjoy it while it’s hot for the best crispy and tender texture.
