Crispy Outside, Soft Inside! 'Drug Toast' Made with an Air Fryer

Introducing ‘Drug Toast,’ a delightful brunch or kid-friendly snack featuring eggs and creamy mayonnaise as its base. This recipe is perfect for reviving slightly stale bread, transforming it into a moist and delicious treat. With just an air fryer, you can whip this up effortlessly, even on busy mornings. While the basic ingredients of bread, eggs, and mayonnaise are fantastic on their own, you can elevate the flavor by adding ham or cheese according to your preference. You can also substitute mayonnaise with various fruit jams for a sweet twist. Today, I’ve added some leftover sandwich ham and cheese for an even richer taste. It’s a simple yet incredibly satisfying brunch option that balances both taste and nutrition. Let me guide you step-by-step on how to make this delicious toast!

Main Ingredients

  • 2 slices of bread
  • 2 eggs
  • 1-2 pinches of salt
  • Mayonnaise, as needed
  • 1 Tbsp sugar (for jam)
  • 1 Tbsp strawberry jam
  • 1-2 slices of sandwich ham (optional)
  • A pinch of dried parsley

Cooking Instructions

Step 1

The most basic ingredients are bread, eggs, and mayonnaise. Feel free to add other ingredients you like for a more personalized toast. Even with just the basic components, you can create a ‘drug toast’ that lives up to its name! Today, I’ve added sandwich ham for extra heartiness. You can also generously add cheddar or mozzarella cheese for an even more delicious result.

Step 1

Step 2

Spread about 1 tablespoon of mayonnaise evenly over one slice of bread. This step ensures the bread becomes wonderfully fragrant and rich as it bakes.

Step 2

Step 3

On the other slice of bread, spread a layer of low-sugar strawberry jam instead of mayonnaise. The sweetness of the jam perfectly complements the savory mayonnaise, creating a fantastic flavor harmony. Feel free to use any fruit jam you have on hand for a personalized sweet touch.

Step 3

Step 4

I didn’t add extra sugar to the jam-covered bread because the jam itself is already sweet. Whether it’s strawberry, blueberry, or apple jam, using your favorite jam will add a delightful sweetness.

Step 4

Step 5

Now, using mayonnaise, pipe a square border around the edges of the bread slices (on top of the mayo and jam). You might think there’s too much mayonnaise at first, but once it’s baked, any excess richness disappears, leaving a wonderfully creamy texture. This border is crucial for holding the egg in place and preventing it from spilling out.

Step 5

Step 6

Carefully crack one egg into each of the mayonnaise borders you’ve created. Gently place the eggs inside, making sure the yolks remain intact.

Step 6

Step 7

To prevent the egg yolk from exploding in the air fryer, gently prick the yolk a couple of times with a fork. This simple step will ensure your toast cooks perfectly without any messy accidents.

Step 7

Step 8

While delicious as is, you can enhance the flavor further by adding ham or cheese. I’ve finely chopped some leftover sandwich ham and sprinkled it over the eggs for added texture and flavor.

Step 8

Step 9

Finally, sprinkle a pinch of dried parsley and 1-2 pinches of salt over the eggs. This seasons the eggs and adds a lovely finishing touch. Your delicious ‘drug toast’ is now ready to be baked!

Step 9

Step 10

Preheat your air fryer to 180°C (356°F). Place the toast inside and bake for 10 minutes. This initial bake helps to crisp up the bread while starting to cook the egg.

Step 10

Step 11

After 10 minutes, the bread should be nicely golden brown. If the egg yolk still looks a bit undercooked, it’s time for a second, quick bake.

Step 11

Step 12

Reduce the temperature to 160°C (320°F) and bake for an additional 5 minutes. This ensures the yolk cooks through to a soft, creamy consistency. Cooking times may vary depending on your air fryer and personal preference, so feel free to check and adjust as needed during this second bake.

Step 12

Step 13

After the second bake, your ‘drug toast’ will be perfectly done! The yolk will be wonderfully soft, and the mayonnaise will have melted into a luscious sauce, similar to condensed milk. The combination of the crispy bread, creamy mayonnaise, and tender egg is simply divine. It’s a fantastic way to serve kids on a picky-eating morning with a glass of milk. I enjoyed mine with a warm cup of coffee during a quiet afternoon, and it was still incredibly delicious even when cooled! If you have some slightly dry bread lying around, try this simple recipe to create a wonderful brunch dish in no time. It’s a satisfying meal that’s both delicious and hearty. Enjoy your meal!
