As the gentle rain started yesterday and continues today, the cool weather makes it pleasant to move around and walk with an umbrella. On days like these, it’s traditional to fry savory pancakes with plenty of oil, but today I’ve prepared a delicious pork neck dish using my air fryer. While intended as a side dish, this grilled pork neck is surprisingly perfect with a drink. The gochujang marinade is absolutely fantastic! This is a pork neck recipe I highly recommend trying.

Main Ingredients

  • Pork neck 500g

Pork Neck Marination

  • Mirin (cooking wine) 1 Tbsp
  • Salt to taste
  • Pepper to taste

Spicy & Sweet Gochujang Marinade

  • Gochujang (Korean chili paste) 2 Tbsp
  • Soy sauce 1 Tbsp
  • Minced garlic 1 Tbsp
  • Oligosaccharide (or corn syrup) 2 Tbsp
  • Sugar 1 Tbsp
  • Ginger powder 1/4 tsp
  • Sesame oil 1 tsp

Cooking Instructions

Step 1

First, rinse the pork neck lightly under running water and place it on a sieve to drain any excess blood. Patting the surface of the pork neck with a paper towel to remove any remaining blood will help reduce any gamey odors.

To the drained pork neck, add mirin, salt, and pepper, coating it evenly. Let it marinate for about 10 minutes to allow the flavors to penetrate. The mirin not only tenderizes the meat but also helps to remove any unwanted smells.

While the pork neck is marinating, prepare the gochujang sauce. In a bowl, combine gochujang, soy sauce, minced garlic, oligosaccharide, sugar, ginger powder, and sesame oil. Whisk everything together until well combined and smooth. Feel free to adjust the sweetness and saltiness to your preference, as household tastes can vary.

I always use a little trick when cooking in the air fryer. When preheating, I place the pan, parchment paper, and the rack inside the air fryer to heat them up beforehand. This ensures that meats and fish cook more evenly without burning. You can use the same method when preheating your oven.

Preheat your air fryer to 180°C (350°F) for 5 minutes. Once preheated, lightly spray the rack with oil, place the marinated pork neck on it, and cook for 12 minutes. Flip the pork neck halfway through to ensure both sides are golden brown. After 12 minutes, generously brush the pre-made gochujang marinade on both sides of the pork neck and cook for another 5 to 6 minutes. This will result in a perfectly crispy outside and juicy inside pork neck gochujang grill!
