This recipe is my personal take on a version seen on TV. I wanted to enjoy chicken breast in a slightly different way. This method ensures the chicken is tender and juicy inside with a delightful crisp on the outside, packed with vegetables and cheese for an extra special treat. If you’re tired of plain chicken breast, give this a try!
Main Ingredients
- 2 chicken breasts (trim excess fat)
- 1/3 onion (finely chopped)
- 1/3 each of red and yellow bell peppers (finely chopped)
- 2 slices cheddar cheese (cut into small pieces)
- 100g mozzarella cheese (as preferred)
Seasoning & Others
- Pinch of salt
- Pinch of black pepper
- Pinch of dried parsley (optional)
- Olive oil, as needed

Cooking Instructions
Step 1
Trim any excess fat from the chicken breasts. Season them with a pinch of salt, black pepper, and dried parsley. (Parsley is optional!)
Step 2
Finely chop the bell peppers (use various colors) and the onion. Chopping them small will make it easier to stuff the chicken breast.
Step 3
In a bowl, combine the chopped vegetables with the cheddar cheese, cut into small pieces, and the 100g of mozzarella cheese. This mixture will be your delicious filling. Mixing in the cheese adds wonderful flavor.
Step 4
Prepare the seasoned chicken breasts. Slice each chicken breast horizontally into two, creating a pocket for stuffing. Be careful not to cut all the way through; you want to create a pocket to hold the filling.
Step 5
Generously stuff the pockets you created in the chicken breasts with the vegetable and cheese mixture prepared earlier. Ensure the filling is packed in well so it doesn’t spill out during cooking.
Step 6
Heat a pan with a generous amount of olive oil over medium heat. Sear the chicken breasts until golden brown on all sides. Once browned, reduce the heat to low, cover the pan, and cook for about 10 minutes. This slow cooking process ensures the chicken breast is cooked through and remains wonderfully moist and tender inside.
