Step 2

To ensure the seasoning penetrates the whole pork belly evenly, score the rind in a diamond pattern. Although it might seem like extra work, this step will significantly enhance the flavor and tenderness, so don’t skip it!

Step 3

Prepare your favorite vegetables, such as zucchini, onion, potatoes, and bell peppers, by cutting them into large pieces. Of course, you can omit the vegetables, but roasting them together offers a richer flavor. (Tip: Roasting eggplant or green onions brings out their sweetness, so they’re recommended!)

Step 4

Let’s season the scored whole pork belly! Gently rub olive oil all over the surface of the pork belly. This locks in the juices and results in a crispier exterior. Don’t forget to apply a little olive oil when making air fryer dishes! After applying olive oil, generously sprinkle with black pepper and salt for seasoning.
