Get your blender or food processor ready. Add the prepared potatoes and 1/2 cup of cold water to the blender. Blend until the potatoes are smooth. Be careful not to add too much water, as this can make the batter too thin; start with the amount specified in the recipe.

To the smooth potato puree, add 1 Tbsp of potato starch and 1/2 tsp of salt. Use a spatula or spoon to mix everything well, ensuring there are no lumps and the ingredients are evenly combined. The consistency should be like pancake batter – smoothly flowing, not too thick or too thin. If the mixture seems too stiff, add a tiny bit more cold water until you reach the desired consistency.
