Main Ingredients
- 300g sweet potatoes (about 2 medium-sized)
- 2 Tbsp corn syrup
- 50mL water
- 1 Tbsp honey
- 1 Tbsp olive oil
- 1 Tbsp sunflower seeds
Cooking Instructions
Step 1
1. Sweet potatoes brown easily, so wash them thoroughly. Cut them into bite-sized pieces and soak them in water to prevent browning. 2. Drain the sweet potatoes completely in a colander. Ensuring they are well-drained is key to achieving a crispy texture and preventing oil splattering if you were to fry them.
Step 2
3. Place the drained sweet potato pieces in the air fryer basket. Drizzle with 1 Tbsp of olive oil and toss to coat evenly. Add a tiny pinch of salt; this will enhance the natural sweetness of the sweet potatoes. Preheat your air fryer to 190°C (375°F) for about 2 minutes. Add the coated sweet potatoes and air fry for 10 minutes. Flipping them halfway through will ensure they cook evenly.
Step 3
4. In a small saucepan, combine 2 Tbsp corn syrup, 1 Tbsp honey, and 50mL water. Bring to a simmer over medium heat. Once the syrup base is liquid, add 1 Tbsp sunflower seeds and cook gently for about 3 minutes, stirring occasionally, until the syrup thickens slightly to your desired consistency. Make sure it doesn’t get too thick.
