  • 40g Finely Ground Almond Flour
  • 1g Salt
  • Assorted Nuts (walnuts, almonds, hazelnuts, etc.), to your liking

In a small saucepan, measure and melt 100g of unsalted butter over low heat. Be careful not to burn the butter. Continue heating until it turns a light golden brown (brown butter). Let the browned butter cool slightly.

In a medium bowl, combine 3 egg whites, 30g of granulated sugar, and 35g of rice syrup. Ensure any lumps of sugar are dissolved.

Using a whisk, gently mix the egg white mixture until just combined; avoid creating too much foam. If the mixture feels too cold, place the bowl over the saucepan with the warming butter (or a double boiler) and stir gently until lukewarm. Do not let it get hot.

Place a fine-mesh sieve over the bowl containing the egg white mixture. Measure and sift 35g of all-purpose flour, 40g of almond flour, and 1g of salt into the sieve. Sifting the dry ingredients ensures a smooth batter without lumps.

Using a spatula or whisk, gently fold the sifted dry ingredients into the wet mixture. Mix until just combined and no dry flour streaks remain, forming a smooth batter. Be careful not to overmix, as this can develop gluten and make the financiers tough.

Gradually pour the cooled brown butter into the batter while mixing. Continue to mix gently until the butter is fully incorporated and the batter is smooth and glossy.
