Ingredients

  • 100g unsalted butter, softened to room temperature
  • 1 large egg, at room temperature
  • 90g granulated sugar
  • 170g cake flour
  • 15g unsweetened cocoa powder
  • 1g baking powder
  • 1g baking soda
  • Chocolate chips (to taste)

Before you start mixing the cookie dough, take out 100g of butter and 1 large egg and let them sit at room temperature. This ensures they’re soft and easy to work with, making the mixing process much smoother.

Cream the softened butter until smooth. Then, gradually add 90g of sugar in four additions, beating well after each addition until the sugar is dissolved and the mixture is light and fluffy, resembling whipped cream. Incorporating air here will help make your cookies crispier.

Crack in the room-temperature egg and whisk vigorously until fully combined and the mixture is creamy. Make sure the egg is well incorporated and not separating from the butter mixture.

Now it’s time to sift in the dry ingredients. First, measure out 170g of cake flour.

Add 15g of unsweetened cocoa powder for a rich chocolate flavor, along with 1g of baking soda and 1g of baking powder to help the cookies rise. Sift all these dry ingredients together. Sifting prevents lumps and ensures the dry ingredients are evenly distributed for a smoother dough.

Add the sifted dry ingredients to the butter and egg mixture. Using a spatula, gently fold the ingredients together until no dry flour streaks remain. Be careful not to overmix, as this can result in tough cookies.

Once the dough is formed and no dry ingredients are visible, stir in about 2 generous handfuls of chocolate chips. Mix gently again to distribute the chocolate chips evenly throughout the dough.

Drop rounded spoonfuls or use an ice cream scoop to portion the dough onto a baking sheet lined with parchment paper or a silicone mat. Shape them slightly if needed. You can press a few extra chocolate chips onto the tops for decoration before baking.
