Ingredients

  • Anchovies (small or for broth) 2.5 handfuls (approx. 75g)
  • Assorted nuts (almonds, walnuts, peanuts, etc.) 1 handful (optional)
  • Oligosaccharide syrup 3 Tbsp (approx. 30ml)
  • Sugar 1 tsp (approx. 5g)
  • Soy sauce 1 Tbsp (approx. 15ml)
  • Cooking wine (Mirin or Sake) 1 Tbsp (approx. 15ml)
  • Sesame oil 1 Tbsp (approx. 15ml)
  • Sesame seeds 1 Tbsp (approx. 5g)

Cooking Instructions

Step 1

First, in a dry pan with no oil, lightly toast the anchovies and nuts over low heat for 1-2 minutes to remove moisture. This step is crucial for achieving a crispy texture and enhancing the nutty aroma. Once toasted, set the anchovies and nuts aside on a separate plate to cool.

Now, return the pan to medium-low heat and add a very small amount of cooking oil or olive oil (about 1/2 tsp). Add the toasted anchovies back into the pan and stir-fry briefly, just enough to coat them with the oil. Be careful not to add too much oil, as this can make the stir-fry soggy. Stir continuously to prevent the anchovies from burning.

Once the anchovies are lightly coated with oil, create a small space in the center of the pan. Pour in 1 Tbsp of cooking wine and 1 Tbsp of soy sauce. As the sauce begins to bubble slightly, quickly toss the anchovies to evenly coat them with the soy sauce. This will infuse the anchovies with a delicious savory flavor.

When the soy sauce has been absorbed by the anchovies, add 1 tsp of sugar and 3 Tbsp of oligosaccharide syrup. Continue to stir-fry until everything is well combined and the anchovies develop a glossy sheen and become crispy. Using a generous amount of oligosaccharide syrup will help achieve a super crispy texture. If you prefer a less sweet or less hard texture, you can reduce the amount of syrup. Stir-fry for another 2-3 minutes. (Tip: The stir-fry will become even crispier as it cools down, so don’t worry if it’s not rock-hard right after cooking.)

We’re in the final stage! Just before turning off the heat, drizzle in 1 Tbsp of sesame oil for an added nutty aroma. Finish by generously sprinkling sesame seeds over the top and giving it a final quick toss. Your delicious crispy anchovy and nut stir-fry is ready! Allow it to cool completely before storing it in an airtight container at room temperature to maintain its crispiness for several days.
