Main Ingredients
  • 100g small dried anchovies (jihri myeolchi)
  • 50g walnuts
  • 50g almonds
  • 20g pine nuts

Seasoning Sauce
  • 1 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin or similar)
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (or oligosaccharide)
  • 1 Tbsp sesame oil
  • 2 Tbsp plum extract (maesilcheong)

Cooking Instructions

Step 1

First, to remove any bitterness or fishy smell and to make the anchovies extra crispy, toast them in a dry pan over medium-low heat. Once they turn golden brown and feel crisp, turn off the heat. Shake the pan to collect any crumbs or small bones and sift them out using a sieve for a clean preparation.

Step 2

To prevent the nuts from becoming soggy and to enhance their nutty flavor, lightly toast the walnuts, almonds, and pine nuts in a dry pan over low heat. Once the moisture evaporates and a fragrant nutty aroma arises, turn off the heat and let them cool slightly. If desired, you can coarsely chop the walnuts.

Step 3

Now, let’s make the delicious seasoning sauce. In a bowl, combine 1 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp sesame oil, and 2 Tbsp plum extract. Stir well until the sugar is dissolved to create the sauce. Be mindful that anchovies are already salty, so use soy sauce sparingly. Taste and adjust the sweetness or saltiness to your preference.

Step 4

Heat a pan over medium-low heat and add the prepared seasoning sauce. Let it come to a gentle boil, then proceed to the next step.

Step 5

Reduce the heat slightly and add all the toasted anchovies and nuts to the pan. Quickly toss everything together to ensure the sauce evenly coats the anchovies and nuts. Stir-fry rapidly for about 1 minute, being careful not to let the sauce burn or stick. Just before turning off the heat, drizzle in a little extra sesame oil and sprinkle with toasted sesame seeds for an enhanced aroma and flavor.
