Essential Ingredients- 1 1/2 paper cups sliced almonds (approx. 90g)
- 2 egg whites (approx. 60g)
- 1/2 paper cup granulated sugar (approx. 70g)
- 3 tablespoons cake flour
- 1/2 paper cup melted unsalted butter (approx. 100g)
- A touch of vanilla extract (to eliminate eggy smell and enhance flavor)
Cooking Instructions
Step 1
In a bowl, lightly whisk the egg whites. Add a few drops of vanilla extract to eliminate any eggy odor. Then, add the granulated sugar and mix until the sugar is dissolved. No need for extensive whisking.
Step 2
Once the sugar is well incorporated, sift the cake flour into the bowl and gently mix until just combined, ensuring there are no lumps. Finally, add the sliced almonds and carefully fold them into the batter. Be gentle to avoid breaking the almonds.
Step 3
After all ingredients are evenly mixed, pour in the melted butter and stir until the batter is smooth and consistent. This will form your tuile batter. Ensure the batter has a pourable but not too thin consistency.
Step 4
Line a baking sheet with parchment paper or a silicone baking mat. Using a spoon or a piping bag, drop spoonfuls of batter onto the prepared sheet, spreading them thinly into rounds. Leave some space between each tuile to prevent them from sticking together. The thinner you spread them, the crispier they will be.
Step 5
Bake in a preheated oven or air fryer at 170°C (340°F) for approximately 10 minutes. Almond tuiles can brown quickly, so keep an eye on them to prevent burning. They are ready when the edges are golden brown.
Step 6
Immediately after removing from the oven, while the tuiles are still hot and pliable, you can shape them. Use cookie cutters to create shapes or drape them over a rolling pin to set a curved form as they cool. They will become wonderfully crisp once completely cooled.
