Snack – Lotus Root Chips Made in the Microwave
On long winter nights when you crave a snack, I made these quick lotus root chips in the microwave.
Ingredients- 1 lotus root
- Salt
- Parmesan cheese
Cooking Instructions
Step 1
First, prepare the lotus root by peeling it and slicing it thinly. Place the slices in a bowl of water to remove excess starch, which helps achieve a crispier texture. Let them soak for about 10-15 minutes.
Step 2
After soaking, thoroughly pat the lotus root slices dry with paper towels or a clean kitchen cloth. Ensuring they are completely dry is crucial for crispiness. Lightly sprinkle salt over the dried slices for seasoning. Then, carefully thread each slice onto a wooden skewer or chopstick, making sure they don’t overlap. This prevents sticking and makes them easier to handle.
Step 3
Arrange the prepared lotus root slices in a single layer on a microwave-safe plate. Microwave on high for 5 minutes. Carefully flip each slice over and microwave for another 3-5 minutes, or until they are golden brown and feel crisp. Cooking time may vary depending on your microwave’s power, so keep an eye on them to prevent burning.
Step 4
Once done, remove the chips from the microwave. While still warm, sprinkle generously with Parmesan cheese. The heat from the chips will help the cheese melt slightly, enhancing the flavor. Allow the chips to cool completely before enjoying. Store in an airtight container to maintain their crispiness.
