Ingredients

  • 2 medium potatoes
  • 50g lotus root
  • 3-4 Tbsp shredded mozzarella cheese
  • 1 tsp salt
  • Pinch of black pepper
  • 3-4 Tbsp potato starch
  • 1 Korean green chili pepper (cheongyang pepper)
  • 1 red chili pepper

Cooking Instructions

First, peel the 2 medium potatoes and julienne them as thinly as possible. Soaking the julienned potatoes in cold water for 5-10 minutes will help remove excess starch, ensuring a crispier texture.

Peel the lotus root and slice it thinly. It’s important to slice it thinly so that it cooks through efficiently without taking too long.

Drain the julienned potatoes well. Add 1 tsp of salt and a pinch of black pepper to the potatoes. Then, add 3-4 Tbsp of potato starch and mix thoroughly until the ingredients are well combined and sticky. You can adjust the amount of starch depending on the moisture content of the potatoes.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Spread the potato mixture thinly and evenly in the preheated pan. Cook over medium heat, rather than high heat, until the bottom is golden brown and crispy.

Once the bottom of the potato pancake is golden brown, carefully flip it over. Sprinkle a generous amount of shredded mozzarella cheese on the flipped side, and arrange the thinly sliced lotus root attractively over the cheese. Reduce the heat to low, cover the pan, and let it cook for about 2 minutes until the cheese is melted and gooey.

Finally, finely chop the Korean green chili pepper and red chili pepper and sprinkle them over the pancake as a garnish.
