Essential Ingredients- Lettuce 100g
- 1 stalk Green Onion (approx. 10cm length)
- 2 Eggs
- 120g Cooked Rice (approx. 1 bowl)
Cooking Instructions
Step 1
Wash the lettuce thoroughly and tear it into bite-sized pieces with your hands. Tearing it naturally provides a better texture than chopping it too finely.
Step 2
Clean the green onion and thinly slice it, including both the white and green parts. This will be used to create fragrant green onion oil.
Step 3
Crack the 2 eggs into a bowl. Whisk them well with a fork or whisk, removing the chalazae (the white cords). You can also add a pinch of salt and pepper for seasoning at this stage.

In a large bowl, place the warm cooked rice. Pour the whisked egg mixture over the rice. Use a spatula or spoon to gently mix the rice and egg together, ensuring each grain is coated. This technique helps prevent the rice from clumping and results in fluffy fried rice.

Heat a frying pan over medium-low heat. Add 1 tablespoon of cooking oil and 1 tablespoon of butter. Add the sliced green onions and sauté until they turn golden brown and release their fragrant aroma. Sautéing the green onions thoroughly is key to the flavor.
