Here’s a kohlrabi salad recipe that’s even crunchier and fresher than radish salad! You can easily make this side dish with simple ingredients. The kohlrabi’s unique crispiness and clean taste will surely tantalize your taste buds.

Main Ingredients

  • 2 kohlrabi
  • 2 Tbsp coarse salt (for pickling)

Seasoning Ingredients

  • 1 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2-3 Tbsp fish sauce
  • 1 tsp sugar
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, thoroughly peel the kohlrabi. If the outer skin is purple, peeling it carefully will result in a softer texture. Trim off the tough, hard bottom part with a knife.

Cut the prepared kohlrabi into strips, not too thinly, suitable for eating. Similar to julienning radish, but avoid making them too thin, as this can reduce the crispiness. Aim for a moderate thickness.

Add 2 tablespoons of coarse salt to the julienned kohlrabi and mix well. Let it sit for 15 to 20 minutes to pickle. Flip it once halfway through to ensure even salting.

Do not rinse the well-pickled kohlrabi. Squeeze out as much water as possible by hand. If it tastes too salty, you can briefly rinse it under cold water and then squeeze out the moisture thoroughly.

To the de-moisturized kohlrabi strips, add all the seasoning ingredients (minced garlic, gochugaru, fish sauce, sugar, sesame seeds) and mix well. Adjust the sugar to your preference. If you like a tangy flavor, you can add a little vinegar.

Mix the kohlrabi vigorously to evenly coat it with the seasonings. Your delicious kohlrabi salad is now ready! If you’d like to add chives or green onions, mix them in gently after the kohlrabi and seasonings are combined.
