Crispy Kkakdugi Fried Rice
The Ultimate Recipe for Delicious Kkakdugi Fried Rice That Will Become Your Favorite
This Kkakdugi (cubed radish kimchi) fried rice is highly recommended for those times when you don’t feel like cooking, on busy mornings, when you have a lot of leftover rice, when your kkakdugi is overly fermented, or simply when you’re tired of regular kimchi fried rice! I often make various kinds of fried rice myself, and I’m sharing this recipe because I happened to have some kkakdugi on hand. The crunchy texture and wonderful flavor make it incredibly delicious.
Ingredients- A suitable amount of well-fermented Kkakdugi (cubed radish kimchi)
- A suitable amount of canned ham (like Spam)
- 1 bowl of warm rice
- 2 eggs
Cooking Instructions
Step 1
First, prepare the canned ham (Spam). Dice the ham into small, bite-sized pieces. You can cut it into larger chunks if you prefer, but I like to cut it small so the ham flavor melds well with the other ingredients rather than dominating. Next, finely chop the kkakdugi. If you dislike the cutting board getting stained red or find it cumbersome to chop small pieces of kkakdugi, using scissors to cut them into small pieces will be much easier and neater.
Step 2
Now, all the ingredients for the fried rice are ready! Heat some cooking oil in a pan over medium-high heat. Add the finely diced ham and stir-fry until it’s lightly browned and fragrant. Once the ham starts releasing its delicious fat, add the chopped kkakdugi and continue to stir-fry them together.
Step 3
Continue stir-frying the ham and kkakdugi. When the kkakdugi starts to soften slightly and appear cooked, add the warm rice. Since my leftover rice was frozen, I microwaved it briefly to thaw before adding it to the pan. Stir gently with a spatula to ensure the rice, ham, and kkakdugi are well combined and don’t clump together. I also added a couple of spoonfuls of kkakdugi brine. Adding a little of the brine not only seasons the rice but also makes it wonderfully moist and flavorful!
Step 4
While the fried rice is cooking, prepare the fried eggs on another burner. A sunny-side-up fried egg with a runny yolk placed on top of the fried rice is essential! Breaking the yolk and mixing it into the fried rice creates an exceptional taste.

And there you have it – delicious Kkakdugi fried rice is ready! Top the warm fried rice with a perfectly cooked sunny-side-up fried egg. Now, break the yolk and gently mix it into the Kkakdugi fried rice. The combination is incredibly satisfying! It has a flavor similar to kimchi fried rice, but the distinct crunchiness of the kkakdugi makes it a unique and special dish.
