Add the marinade ingredients: 2 Tbsp olive oil, 2 Tbsp cooking wine, 2 Tbsp curry powder, 1 Tbsp minced garlic, and about 0.7 tsp of herb salt to the bowl. Use your hands to gently massage the marinade into the chicken pieces, ensuring every piece is evenly coated. Let the marinated chicken rest in the refrigerator for at least 1 hour to allow the flavors to meld. If you have time, marinating it the night before and cooking it the next day will result in an even deeper flavor.
