  • 1/2 Onion
  • 6 Perilla leaves (깻잎)
  • Glutinous rice flour, as needed (for coating)

Pork Marinade

  • 1 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 2 Tbsp Soy sauce
  • 1 Tbsp Cooking wine (Cheongju)
  • 1/2 tsp Ginger powder
  • A pinch of Black pepper

Yuzu Glaze Sauce

  • 2 Tbsp Yuzu marmalade/jam
  • 6 Tbsp Soy sauce
  • 2 Tbsp Sugar
  • 3 Tbsp Lemon juice
  • 2 Tbsp Cooking wine (Mirin)
  • 2 Korean green chilies (remove seeds and finely chop)
  • 1 Red chili (remove seeds and finely chop)
  • 1 Tbsp Perilla oil (Deulgireum)

Cooking Instructions

Step 1

Pat the 600g of pork neck dry with paper towels to remove any excess blood. Thoroughly draining the blood is key to a clean and delicious flavor, free from any gamey taste.

Step 1

Step 2

Prepare the marinade ingredients. Cut the pork neck into bite-sized pieces, about 1.5-2cm thick. Add 1 Tbsp of sugar to the pork. Gently mix to help tenderize the meat; sugar works wonders in softening the pork.

Step 2

Step 3

Next, add 1 Tbsp of minced garlic for a fragrant aroma.

Step 3

Step 4

Add 2 Tbsp of soy sauce to provide a savory depth of flavor.

Step 4

Step 5

Mix in 1 Tbsp of cooking wine (Cheongju) to effectively eliminate any potential pork odor.

Step 5

Step 6

Add 1/2 tsp of ginger powder for a subtle, warming spice. If you don’t have ginger powder, a tiny amount of fresh minced ginger can also be used.

Step 6

Step 7

Finally, sprinkle in a pinch of black pepper. Gently knead the pork with your hands to ensure the marinade is evenly distributed. Let the pork marinate for at least 30 minutes in the refrigerator. The longer it marinates, the deeper the flavor will become.

Step 7

Step 8

While the pork is marinating, prepare the refreshing Yuzu Glaze Sauce. In a bowl, add 6 Tbsp of soy sauce.

Step 8

Step 9

Stir in 2 Tbsp of sweet yuzu marmalade.

Step 9

Step 10

Add 2 Tbsp of sugar to balance the sweetness.

Step 10

Step 11

Pour in 3 Tbsp of lemon juice for a bright, zesty kick.

Step 11

Step 12

Add 2 Tbsp of cooking wine (Mirin) to enhance the overall flavor profile of the sauce.

Step 12

Step 13

Finely chop 2 Korean green chilies (seeds removed) and add them to the sauce. If you prefer more heat, feel free to add extra.

Step 13

Step 14

Finely chop 1 red chili (seeds removed) for a beautiful color contrast.

Step 14

Step 15

Finally, drizzle in 1 Tbsp of perilla oil for a nutty aroma. Whisk all ingredients together until well combined. Your delicious Yuzu Glaze Sauce is now ready!

Step 15

Step 16

Take the marinated pork out of the refrigerator. Coat each piece evenly with glutinous rice flour on all sides. Lightly tap off any excess flour. This coating will create a wonderfully crispy texture when fried.

Step 16

Step 17

Heat a pan with a moderate amount of oil over medium heat. Carefully place the flour-coated pork pieces in the hot pan. Fry until golden brown and crispy on both sides, ensuring the pork is cooked through. Cooking over medium heat allows the inside to cook thoroughly while the outside becomes perfectly crisp.

Step 17

Step 18

Arrange the beautifully cooked pork on a serving plate. Serve with the prepared Yuzu Glaze Sauce. Adding thinly sliced onion and fresh perilla leaves on the side provides a delightful crunch and aromatic freshness, enhancing the overall dining experience. The contrast between the crispy coating, tender pork, and the tangy yuzu sauce is truly exceptional!

Step 18

Step 19

Indulge in the rich flavors and aromas! Make tonight’s dinner special with this unique Pork with Glutinous Rice Coating. Enjoy your meal!
