Christmas is here again, and it’s the perfect time for a cozy home party! I made some chicken tenders to add a special touch to our celebration. These crowd-pleasing chicken tenders, when served with a fresh salad, make an excellent party dish. I’ll share my secrets for eliminating any unwanted gamey smell from the chicken and how to achieve that perfect crispy exterior while keeping the inside tender and moist.   • 1 cup Chicken Fry Mix (specialty)
  • 1 cup All-Purpose Fry Mix
  • 2 cups Panko Breadcrumbs
  • 200ml Milk

  • 1/2 Tbsp Salt
  • 1/2 Tbsp Black Pepper

Cooking Instructions

First, prepare 400g of chicken tenderloin. If using frozen chicken, ensure it is completely thawed before proceeding.

To eliminate any potential gamey odors, soak the thawed chicken tenderloin in 200ml of milk for about 30 minutes. Milk is excellent at absorbing and neutralizing these smells.

After soaking, drain the chicken tenderloin using a colander. Rinse it gently under clean, running water to remove any excess milk.

Carefully trim away any tough tendons or excess fat from the chicken tenderloin using scissors or a knife. This step is crucial for achieving a tender and pleasant texture.

Season the prepared chicken tenderloin evenly with 1/2 tablespoon of salt and 1/2 tablespoon of black pepper. Let it marinate for another 30 minutes. This allows the flavors to penetrate deep into the meat.

For the coating, mix together 1 cup of all-purpose fry mix and 1 cup of chicken fry mix. This combination will give you both a wonderfully crispy texture and a delicious chicken flavor.

Place the mixed fry flour into a plastic bag. Add the seasoned chicken tenderloin and shake the bag well. This ensures the chicken is lightly and evenly coated with the flour, acting as a base for the batter and breadcrumbs.

Now, let’s make the batter. In a separate plastic bag, combine the chicken fry mix and all-purpose fry mix (total 2 cups) and add 100ml of water. Mix until you have a smooth batter that coats the chicken without being too thick or too thin. Dip the floured chicken into the batter, ensuring it’s fully coated. Then, transfer the battered chicken to a bowl with 2 cups of panko breadcrumbs. Gently press the breadcrumbs onto the chicken with your hands to ensure a thick, even coating. This thorough coating is key to achieving extra crispiness.

You can fry these chicken tenders immediately, or for future convenience, freeze the un-fried coated tenders in an airtight container. They’ll be ready to fry whenever you crave them!

Finally, heat a generous amount of cooking oil in a pan to about 170°C (340°F). Carefully place the coated chicken tenders into the hot oil. Fry them for approximately 5-7 minutes, turning occasionally, until they are golden brown and perfectly crispy on all sides. Your delicious homemade chicken tenders are now ready to be enjoyed!
