Chicken Tender Ingredients

  • 200g Chicken tenderloin
  • 30g Rich soy milk
  • 30g Rich black bean soy milk
  • Pinch of salt
  • Pinch of black pepper
  • 1 tsp Bingsu bean powder (for dusting)
  • 2 Tbsp Frying powder
  • 1 Egg
  • 45g Breadcrumbs
  • 3g Dried parsley flakes

Soy Mayo Sauce Ingredients

  • 4 Tbsp Mayonnaise
  • 1 Tbsp Rich black bean soy milk
  • 1 Tbsp Rich soy milk
  • Pinch of black pepper
  • 1 Tbsp Olive oil
  • 1 tsp Bingsu bean powder
  • 1 tsp Oligosaccharide

Cooking Instructions

Step 1

First, prepare the chicken tenderloin. Remove any sinew and make shallow cuts with a knife. This helps the marinade penetrate better and ensures even cooking.

Step 1

Step 2

Place the chicken tenderloin in a bowl. Add 30g each of the rich soy milk and the rich black bean soy milk. Ensure the chicken is well-coated and let it marinate for 10 minutes. The soy milk will tenderize the chicken beautifully.

Step 2

Step 3

Lightly drain the marinated chicken tenderloin. Season it with a pinch of salt and pepper, or use herbed salt if you prefer. Let it sit for about 5 minutes to allow the seasoning to absorb.

Step 3

Step 4

Now, prepare the ingredients for the coating. Gather all ingredients except those for the soy mayo sauce.

Step 4

Step 5

Get two wide plates ready. On one plate, mix the breadcrumbs with the dried parsley flakes. On the other plate, lightly beat the egg with a fork.

Step 5

Step 6

Add the bingsu bean powder and frying powder to the seasoned chicken tenderloin. Toss to coat evenly. Gently press the chicken to help the powder adhere well.

Step 6

Step 7

Dip the chicken tenderloin, coated in the bean and frying powder, into the beaten egg. Ensure it’s fully coated on all sides with the egg wash.

Step 7

Step 8

Transfer the egg-coated chicken tenderloin to the plate with the parsley breadcrumbs. Generously coat both sides with the breadcrumb mixture, pressing lightly to ensure good adhesion. This creates the crispy crust.

Step 8

Step 9

Your chicken tenders, now infused with soy milk and coated, are ready! It’s time to cook them to perfection.

Step 9

Step 10

We’ll be using an air fryer. Line the air fryer basket with parchment paper and arrange the coated chicken tenders in a single layer. Lightly brush the tenders on both sides with olive oil or cooking oil for extra crispiness.

Step 10

Step 11

Preheat your air fryer to 200°C (400°F). Place the chicken tenders inside and cook for 8 minutes. Then, flip them over and cook for an additional 5 minutes. This total cooking time of 13 minutes will yield wonderfully crispy outside and moist inside chicken tenders. (Adjust cooking time based on your air fryer’s performance.)

Step 11

Step 12

Now, let’s make the delicious soy mayo sauce that pairs perfectly with the chicken tenders. In a small bowl, combine 4 tablespoons of mayonnaise with 1 tablespoon each of the rich black bean soy milk and the rich soy milk.

Step 12

Step 13

Add a pinch of black pepper and stir until all ingredients are well combined.

Step 13

Step 14

Stir in 1 tablespoon of olive oil for added flavor and a smoother consistency.

Step 14

Step 15

Finally, add 1 teaspoon of bingsu bean powder and whisk until smooth. The bean powder adds a nutty flavor and a lovely subtle color to the sauce.

Step 15

Step 16

For a touch of sweetness, stir in 1 teaspoon of oligosaccharide. Mix well. Your delightful soy mayo sauce is now ready!

Step 16

Step 17

Transfer the soy mayo sauce to a small serving bowl. Sprinkle a little extra bean powder on top for garnish and an enhanced nutty aroma.

Step 17

Step 18

Finally, arrange the warm, freshly air-fried soy milk chicken tenders on a plate alongside the prepared soy mayo sauce. This completes your nutritious and flavorful meal! Enjoy your delicious creation!
