Step 1
Make an incision at the ankle joint of each chicken drumstick with a knife, cutting down to the bone. This helps prevent the bone from breaking or the meat from cooking unevenly during frying, and ensures the batter adheres better.

On the drumstick, make another incision about one-third of the way down from the bone, into the fleshy part. This cut helps the drumstick cook evenly all the way through and makes it easier to turn the meat later.

Lightly season the cuts with salt and pepper. Then, lightly coat the entire drumstick with flour. The flour acts as a binder, helping the batter stick well, and also helps to lightly secure the meat.

In a large bowl, combine 1 cup of chicken powder and 1.5 cups of water. Whisk until smooth to create the batter. The consistency should be pourable but not too thin – it should coat the back of a spoon nicely.

Dip the floured drumsticks into the batter, ensuring the fleshy parts are well-coated. You can lightly shake off excess batter from the bone areas if it seems too thick.

Heat oil in a pot or deep fryer to 180°C (350°F). Carefully place the battered drumsticks into the hot oil and fry for about 7-8 minutes for the first fry. Remove the drumsticks, let them drain for a moment, then return them to the 180°C oil for another 2-3 minutes for a second fry.
