First, prepare 500g of boneless chicken thighs. To remove any gamey odor, soak the chicken in milk or rice water for about 30 minutes. Afterwards, rinse it under cold water, pat it dry, and cut it into bite-sized pieces.

Transfer all the cut chicken pieces into a large bowl. Add 1 tablespoon of minced garlic and mix well to ensure the garlic aroma permeates the chicken.

For the initial seasoning, add about 0.2 teaspoons of salt. This will help remove any remaining odor and enhance the chicken’s savory flavor. (You can use seasoned salt if preferred.)

Now, add 1 tablespoon of curry powder. Curry powder is excellent at eliminating odors and adds a wonderful depth of flavor to the chicken. Gently mix the minced garlic, salt, and curry powder into the chicken pieces with your hands until everything is evenly combined.

Add 1.5 cups of frying mix (measured with a standard paper cup) to the marinated chicken. The frying mix will coat the chicken, creating a delightfully crispy texture when cooked.

In a separate small bowl, whisk 1 egg until well beaten. Also, spread a generous amount of breadcrumbs on a plate. Having enough breadcrumbs is key to achieving a good, even coating.

Dip the marinated and frying-mix-coated chicken pieces into the beaten egg, ensuring the entire surface is coated. Then, transfer each piece to the plate of breadcrumbs. Press gently to ensure the breadcrumbs adhere evenly and thoroughly all over the chicken. Repeat this process for all the chicken pieces to complete the coating.

Preheat your air fryer. (If preheating is not necessary for your model, you can skip this step.) Arrange the coated chicken pieces in the air fryer basket in a single layer, making sure they don’t overlap or touch each other. Lightly spray the chicken with cooking oil or olive oil for extra crispiness. Cook at 180°C (350°F) for 10 minutes.

After 10 minutes, carefully open the air fryer basket. Check if the chicken pieces are golden brown on the first side. If they need more time, add a few more minutes. Once the first side is sufficiently cooked, use tongs to carefully flip all the chicken pieces over.

Lightly spray the flipped side of the chicken with cooking oil or olive oil again. This will help ensure the other side also becomes crispy. Return the basket to the air fryer and cook for another 10 minutes at 180°C (350°F). The total cooking time will be approximately 20 minutes.
