Crispy Italian Tomato Bruschetta with Fresh Tomatoes and Herbs
Easy Italian Appetizer! Homemade Tomato Bruschetta Recipe
Try making Italy’s signature appetizer, Bruschetta, easily and quickly at home! Topped with fresh tomatoes and aromatic herbs on crispy yet tender grilled baguette slices, this refreshing bruschetta is perfect for a simple breakfast or as a delightful finger food. It’s also a great way to use up slightly stale bread, and requires no complicated steps, making it a foolproof recipe for everyone.
Ingredients- 4 slices of baguette
- 1/2 ripe tomato
- 1 tsp minced onion
- 1 Tbsp extra virgin olive oil
- 1/2 Tbsp honey
- Pinch of salt
- Pinch of black pepper
- Balsamic glaze, to drizzle
- Pinch of chopped parsley
Cooking Instructions
Step 1
It’s best to use baguette slices directly from the freezer. Place them in a preheated oven at 180°C (350°F) and toast for about 3-5 minutes until golden brown. Adjust the toasting time based on the thickness of the bread and your oven. The goal is to achieve a ‘crispy outside, soft inside’ texture.
Step 2
Thoroughly wash the fresh tomato, remove the stem, and scoop out the seeds. Dice the tomato into relatively large pieces. Finely mince the onion. In a bowl, combine the diced tomato and minced onion. Add 1 Tbsp of extra virgin olive oil, 1/2 Tbsp of honey, a pinch of salt, and a suitable amount of black pepper. Gently mix everything together.
Step 3
You can mix the balsamic glaze into the tomato mixture, but doing so might darken the overall color. Personally, I prefer to lightly drizzle the balsamic glaze directly onto the toasted bread just before topping it with the tomato mixture. This helps preserve the vibrant color and flavor. Generously spoon the prepared tomato mixture onto the bread drizzled with balsamic glaze.
Step 4
Finally, sprinkle some chopped fresh parsley over the top for a burst of color. For garnish, you can add aronia berries or a basil leaf to create a more visually appealing bruschetta. If you don’t have aronia or basil, blueberries can also be used as a garnish for a unique taste and appearance. Feel free to use fresh ingredients from your refrigerator to create your personalized bruschetta!
