Crispy Homemade Tonkatsu
Transforming Leftover Grilling Meat into Delicious Tonkatsu
A recipe for crispy tonkatsu made easily at home using thinly sliced grilling meat. Coating the meat thoroughly and frying until golden and crisp creates a special dish that everyone, from kids to adults, will love.
Main Ingredients- Pork grilling cut (thinly sliced) 100g
- Beef grilling cut (thinly sliced) 50g
- 1 Egg
- All-purpose flour, as needed
- Panko breadcrumbs, as needed
Marinade & Sauce- Mirin (or cooking wine) 1.5 Tbsp
- Soy sauce 1.5 Tbsp
- Minced garlic 1 Tbsp
- Onion (finely minced), about 1 small piece
- Apple (finely minced), about 1 small piece
- Cooking oil (for frying), plenty
- Demi-glace sauce (optional)
- Mirin (or cooking wine) 1.5 Tbsp
- Soy sauce 1.5 Tbsp
- Minced garlic 1 Tbsp
- Onion (finely minced), about 1 small piece
- Apple (finely minced), about 1 small piece
- Cooking oil (for frying), plenty
- Demi-glace sauce (optional)
Cooking Instructions
Step 1
First, lightly rinse the pork grilling meat under running water to remove any blood. Along with the beef grilling meat, sprinkle pepper on the pork. This helps remove any gamey odor and enhances the flavor.
Step 2
Let’s make the marinade sauce to add more flavor to the tonkatsu. In a bowl, mix 1.5 Tbsp of Mirin (or cooking wine), 1.5 Tbsp of soy sauce, and 1 Tbsp of minced garlic. Add the finely minced onion and apple. The sweetness from the fruit and the aroma of the onion will tenderize the meat and add umami.
Step 3
Now it’s time to coat the meat with the breading. First, coat the meat evenly with all-purpose flour on both sides. Gently shake off any excess flour. Next, dip the floured meat into the beaten egg, ensuring it’s fully coated. Finally, generously coat the meat with panko breadcrumbs, pressing gently to adhere. Pressing the breadcrumbs firmly will result in an extra crispy texture after frying.
Step 4
Now, let’s fry the breaded meat. Pour a generous amount of cooking oil into a pan and preheat over medium heat. Once the oil is at the right temperature (a pinch of panko breadcrumbs should sizzle and float immediately), carefully place the tonkatsu pieces into the oil. Fry until both sides are golden brown and the meat is cooked through. Adjust the frying time based on the thickness of the meat.
Step 5
Once the tonkatsu is perfectly fried, place it on paper towels to drain excess oil. This helps maintain its crispiness. Drizzle generously with your favorite demi-glace sauce and enjoy! It makes a wonderful meal when served with a side salad or rice.
